If you follow me on Instagram you probably already know how much I adore teatime… the ritual of setting the table and getting together with people I love to have a good time while enjoying yummy food and a hot cup of tea is priceless to me!
And if it’s with a home baked cake coming straight out of the oven… it’s even better!!! So I’m sharing with you guys, my fave cake recipe… it’s easy to make, delicious and super soft, plus it makes the house smell amazing! Everything a cake should be!!!
- 3 apples
- 3 eggs
- 2 cups of dark muscovado sugar
- 1 cup of vegetable oil
- 2 cups of wholemeal flour
- 1 cup of jumbo oats
- 1 tablespoon of baking powder
- 1 tablespoon of cinnamon powder
- demerara sugar and cinnamon powder to sprinkle over the top
STEP 1: Preheat the oven at 180C. Grease a cake tin and set aside (I used a round 20cm one).
STEP 2: Core and dice the apples.
STEP 3: In a blender, blend together the apples, eggs, muscovado sugar and oil.
STEP 4: In a large mixing bowl, mix together the flour, oats, and the mixture from the blender.
STEP 5: Add the baking powder into the mixture and mix it.
STEP 6: Pour the mixture into the greased tin and level.
STEP 7: In a cup mix together 1 teaspoon of demerara sugar with 1 teaspoon of cinnamon powder. Then sprinkle it over the top of the batter. Then sprinkle some oats over it.
STEP 8: Bake it for about 40 min, but start checking after 30 min. It will be ready when it’s firm and a skewer inserted into the middle comes out clean.
STEP 9: Now invite the girls over for some catching up over tea and yummy cake!
